Tasks/ Job duties: Break down whole fish (e.g. tuna, salmon, mackerel, sea eel, sea bream, sea bass, ika, tako, tai, hamachi, hotate, bonito, etc.) into Japanese sushi style fish fillets; Maintain strict food safety and sanitation practices, particularly during raw fish handling with careful attention to temperature control and hygiene standards; Determine the size of food portions and costs, Plan menus and estimate food requirements for their realization and train staff with new menu items; Assist management with new dish prototyping, adjusting the portions and flavors to match the restaurant’s concept; Requisition food and kitchen supplies, Prepare and cook complete meals or individual dishes and foods; Prepare dishes for customers with food allergies or intolerances; Prepare and cook special meals for customers as instructed by manager or chef; Inspect kitchens and food service areas regularly to maintain cleanliness and compliance with health regulations; Train staff in preparation, cooking and handling of food, especially in knife handling; Monitor kitchen inventory, place orders for fresh ingredients such as whole fish and supplies, and ensure accurate records of stock and equipment; Supervise kitchen staff and helpers; Maintain inventory and records of food, supplies and equipment; Manage kitchen operations
